Sumario: The general objective of this investigation was to determine the variation of the polarimetric analysis due to the presence of dextran in cane juice. The polarimetric method established by the ICUMSA methodology was used in the investigation, In the research, pre-harvest cane was used because it has low levels of dextran due to the cutting conditions and time of exposure to the environment. This non-crystallizable polysaccharide is synthesized by the lactic acid bacterium Leuconostoc Mesenteroides from sucrose, causing some production problems such as: •Increase of viscosity of cane juice, which requires a greater energy expenditure to process it. Errors in the estimation of the production when evaluated by the polarimetric method, since the method is by refraction of light, this rotates the light beam according to the compounds present in the juice, dextran being a dextrorotatory compound as well as the sucrose, the measurement is altered.
