Sumario: ABSTRACT In Guatemala there is a raw material rich in proteins, vitamins and minerals such as amaranth, sorghum and malanga, which together with whey powder, can be used in the preparation of a protein food supplement capable of contributing to the good diet of the being. human, because this raw material contains a high nutritional value. This research analyzed the development of a new instant product, demonstrating the use of whey powder, as well as amaranth, sorghum and malanga in the food industry. In this research document the methodology, resources, materials and equipment used in the formulation of a protein food supplement from whey powder, amaranth "Amaranthus sp", sorghum "Sorghum vulgare" and malanga "are disclosed Colocasia esculenta ”, as well as the results set out in the objectives of this investigation. In this research project, three formulations were developed, which were evaluated by means of sensory analysis, the acceptance of each of the formulations, which were sent to the bromatology laboratory of the Faculty of Veterinary Medicine and Zootechnics of the University of San Carlos from Guatemala, to perform the proximal chemical analysis of protein. The formulation that met the necessary requirements to be considered a protein food supplement, this being the formula No. 2, code 499, which contained 85% whey powder, 7% amaranth, 5% sorghum and 3 % of malanga, which obtained the highest protein content of the three formulations, this formulation was also the one that presented the highest acceptability through the panelists.
