Sumario: The jackfruit (Artocarpus heterophyllus Lam.) Is a tropical evergreen tree, with a very exotic-looking fruit and abundant benefits for the body. The pulp is yellow in color and has a sweet, slightly acidic flavor. Jackfruit seeds are also edible and are rich in carbohydrates, lipids and proteins. In addition, its leaves have the property of improving glucose tolerance and this effect indirectly causes weight loss. The objective of this research was to evaluate different formulations of a drink from the green leaf of jackfruit (Artocarpus heterophyllus, Lam.) And for its realization the leaves of the Yaca plant cultivated in Mazatenango of the department of Suchitepéquez, Guatemala were used. The leaves were subjected to the withering, curling, fermenting and dehydration process, to then elaborate five formulations of 1g, 2g, 3g, 4g and 5g, and the preparation of the corresponding drinks, which were subjected to sensory evaluation, by means of a panel of cupping of seventeen trained individuals, using for the effect five repetitions, and a hedonic scale of seven points, the data were tabulated and by means of an analysis of variance it was determined that there is a statistically significant difference between formulations, which was verified through the Tukey's test, however the preference for the formulation containing 5 g of jackfruit leaf was established, by means of comparison of means.
