Aflatoxins are secondary metabolites of fungi, and are toxic to animals and humans. If the milk producing animals consume food contaminated with aflatoxin B1, the liver biotransforms this molecule in aflatoxin M1 and it is excreted in urine, feces and milk.
The objective of this study was to determine if there are controls in Panama to achieve the safety of the milk consumed nationally. The methodology used was a documentary review of scientific articles, reports, national and international regulations and interviews. It was found that in Panama there are standards for the quality of milk produced in the country and imported milk, but the standards do not include aflatoxin controls. According to the RESOLUTION AUPSA -DINAN -002 -2008, the government requires a certificate to import milk, which does notinclude aflatoxin controls. Neitherhave studies been done on aflatoxin content in milk for national consumption.
