Sumario: Rice, the basic food for a large part of the world's population, is the main component of the diet of Panamanians. One of the main problems of this grain is the presence of mycotoxins, which can affect health. The objective of this article is to review and analyze the current situation regarding the presence of mycotoxins in rice consumed in Panama. The methodology consisted of a review of scientific articles, national and international regulations, statistics and other related documents. The findings reveal that in Panama there are no reports of the monitoring of this grain in regard to mycotoxins, which is a risk factor for the health of consumers. There are also few studies on issues related to mycotoxins in rice. Investigations of this type would produce reliable data regarding the safety of the grain and would establish the basis for future national regulations.
