Sumario: Food safety in the dairy industry is a critical issue to ensure that products are consumed at high quality, as well as being available in sufficient quantities to meet domestic demand. Therefore, the overall objective was to analyze food safety in raw dairy products in Panama 2022-23. Framed within the qualitative paradigm, exploratory-descriptive, it employed in-depth interviews, observations, and document analysis. The grounded theory method allowed for the generation of theoretical constructs, providing emerging concepts. The findings revolved around outbreaks of foodborne illnesses, microbiological analysis of raw dairy samples, assessments of hygiene practices and handling. It was concluded that food safety is an area of concern, and that hygiene measures must be strengthened to ensure the safety of products for the sake of public health. Strategic planning, strategies, and good manufacturing practices with quality standards are required.
