Acase study was conducted in a panamaniancondiment processing company, in order to facilitate the implementation of a food safety management system; starting in 2014, for a period of 4 years, with a qualitive research, applying thematic <20>Plus (+) Economía:ISSN2411-0353 -ISSN-L2644-4046|Vol.7. Núm. 2, Junio 2019 –Noviembre 2019analysis, direct observation and interviews as techniques of obtaining information. It establishes a systematic process and a schedule of topics for the training of ludictype to employees, with emphasis in food safety culture, fulfilling in addition with the Panamanian Decree 1784 of November 14, 2014. We analyzed 24 elements corresponding to the good manufacturing practices (GMP), increasing from 63% in 2014 to 96 % in 2018, a result that suggests the importance of transmitting the food safety culture with playful training in small and medium-sized food companies.
