Sumario: ABSTRACT The research focused on the formulation and standardization of a cake based on lean meat of chicken breast (Gallus domesticus), using amaranth flour (Amaranthus spp.) As a meat extender, knowing the nutritional, protein and vitamin properties of this grain. , considering it as a good element to be mixed and thus improve the formulation of a food that benefits the Guatemalan population. The procedure used was divided into three stages, the first consisted in the preparation of meat cakes, making five formulations where the contents of chicken breast meat and amaranth flour were varied, in 75% and 15% to 80% and 10% of these two elements respectively; the second stage consisted of a sensory panel made up of students from the food engineering career at the Centro Universitario de Suroccidente; and the third stage was carried out with laboratory analysis. Having as results a wide acceptance of the formulations, acceptable protein contents, omega 3-6 fatty acids, and adequate yields in weight and diameter of the cake after cooking. It is concluded that the amaranth flour works as a good extender in the formulations of the lean meat cake of chicken breast due to the results obtained from the tests carried out on the weight performance and reduction of the diameter after cooking, the acceptance of the sensory panel and high nutrient content; therefore, the research hypotheses are accepted, since there was a statistical difference between the formulations. When performing the statistical analysis, it was determined that there is no statistical difference between the formulations in terms of sensory quality; Likewise, it was established that there is no statistical difference in terms of taste, texture, smell and color aspects evaluated in the different formulations.
